Blanquette de Limoux traces its origins back to the Middle Ages, in the cellars of the Benedictine abbey of Saint-Hilaire. There, a monk discovered that a wine he had bottled and carefully sealed with a cork had developed natural bubbles — as if a second fermentation had begun. The world’s first brut sparkling wine was born in the Limoux vineyards.

As early as 1929, the Limoux production area was officially delimited, becoming the first in Languedoc to be granted an Appellation d’Origine Contrôlée with Blanquette de Limoux and Blanquette Méthode Ancestrale (decree of 18 February 1938), and one of the earliest AOCs in France. Today, Limoux counts five AOPs: Blanquette de Limoux, Blanquette Méthode Ancestrale, Crémant de Limoux, Limoux Blanc and Limoux Rouge, as well as an emblematic historic grape variety: Mauzac.
